This really isn’t Sam’s recipe, but he was sitting beside me when I discovered it. I even let him eat one. However, I take full responsibility for how delicious it is.
-Start by taking a low-fat white or whole wheat pita [I like whole wheat, but you can use whatever you want]
-dribble a little light extra virgin olive oil onto the pita
-then lightly apply a roasted garlic and herb tomato sauce [or whatever catches your eye in the spaghetti sauce aisle]
-sprinkle some low-fat shredded mozzarella cheese on top
Now, here is where you can be creative. My favorite pizza is mushroom and onion. So, I like to sauté some mushrooms and onions in a pan with a little salt, pepper and light olive oil. When its partly cooked spread it on the pita pizza. Then toast it in the toaster oven for 10 minutes or until its golden and crispy.
Also, one pita pizza I’ve tried it barbecue chicken. Lightly sauté the chicken in a pan [not all the way because it will get over cooked in the toaster]. Then take it out and mix it with your favorite barbecue sauce. Sam and I usually use Dinosaur barbecue, but my dad likes KC….so whatever works. If you want to spice it up a bit you can put a little Frank’s Red Hot sauce. Mmm mmm good.
